Ingredients
Scale
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 garlic cloves, minced
- 2 medium carrots, peeled and diced
- 2 celery stalks, diced
- 1 cup long-grain white rice (uncooked)
- 6 cups chicken broth
- 2 cups cooked chicken, shredded or diced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons lemon juice (optional, for added brightness)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add the diced onion, garlic, carrots, and celery, and sauté until the vegetables are softened, about 5 minutes.
- Stir in the dried thyme, parsley, and rice, and cook for 1-2 minutes to toast the rice lightly.
- Pour in the chicken broth and add the bay leaf. Bring the mixture to a boil, then reduce the heat to low and simmer for 15-20 minutes, or until the rice is tender.
- Add the cooked chicken to the pot and stir to combine. Simmer for an additional 5 minutes to heat the chicken through.
- Remove the bay leaf, season with salt and pepper to taste, and stir in lemon juice if desired.
- Serve hot, garnished with freshly chopped parsley. Pair with crusty bread or a side salad for a comforting meal.
