  • 2 cups cooked chicken, shredded or diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons lemon juice (optional, for added brightness)
  • Fresh parsley, chopped (for garnish)

Instructions

  • Heat olive oil in a large pot over medium heat. Add the diced onion, garlic, carrots, and celery, and sauté until the vegetables are softened, about 5 minutes.
  • Stir in the dried thyme, parsley, and rice, and cook for 1-2 minutes to toast the rice lightly.
  • Pour in the chicken broth and add the bay leaf. Bring the mixture to a boil, then reduce the heat to low and simmer for 15-20 minutes, or until the rice is tender.
