  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 pound ground beef or turkey
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) corn kernels, drained
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 2 cups beef or chicken broth
  • 1 packet taco seasoning
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, diced avocado, tortilla chips, chopped cilantro

Instructions

  • Heat olive oil in a large pot over medium heat. Add the diced onion and garlic, and sauté until fragrant and the onion becomes translucent.
  • Add the ground beef or turkey to the pot and cook until browned, breaking it up into crumbles with a spoon. Drain any excess fat.
  • Stir in the taco seasoning, mixing well to coat the meat evenly.
  • Add the black beans, kidney beans, corn, diced tomatoes, diced tomatoes with green chilies, and broth to the pot. Stir to combine.
  • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20 minutes, stirring occasionally.
  • Taste and adjust seasoning with salt and pepper as needed.
  • Serve hot in bowls and garnish with your favorite toppings like shredded cheese, sour cream, avocado, tortilla chips, or cilantro.
